Using wood chips, or wood chunks, is a great way to add delicious smoky flavor to your food, and either will provide great results. The big difference is that chips burn more quickly than chunks. It's usually a good idea to soak chips (not chunks) in water for at least 30 minutes before adding them to the fire to help keep them from going up in flames.
You should pre-heat your grill with the lid closed for about 10-15 minutes or until you reach 500-550 degrees fahrenehit. Be sure to do this every time you grill!
While grilling, the lid should be kept closed. This allows the grill to maintain a consistent circulation of heat, and it allows the food to retain delicious flavors. We've got a saying here at Weber..."Lookin' Ain't Cookin'".
Yes, if you set the burners correctly. Pre-heat and set the burners to low. Turn the middle burner(s) to an off or low position and place food over that area. For two-burner models, turn off one of the burners or positioning the food in the area between the two burners.
